Restaurant flatware comes in four different weights: forged, extra-heavy, heavy, and medium weight. The weight refers to the type and quality of the stainless steel and does not necessarily correspond to the heft of an item.
Forged flatware is the thickest and strongest as it's made from a single piece of thick stainless steel and is extremely durable to withstand any commercial environment.
Extra-heavy weight flatware is a premium grade and exudes a level of quality for finer establishments, feels sturdy, and is difficult to bend. It is made from either 18/0, 18/8, or 18/10 stainless steel.
Heavy Weight Flatware is more durable than medium, and makes for a nice presentation for fast-casual or mid-level eateries.
The lightest option is Medium Weight Flatware, also called economy weight, and is commonly sought after by the value-minded customer.
Why should I clean and handle the knives separately from the rest of the flatware?
Due to differences in composition between the knives and other flatware items, it is best to separate them in different baskets to avoid corrosion. We recommend washing the knives separately and drying them right away to maintain the quality of your Acopa knives long-term. When the product arrived, they looked great. I was very happy with my purchase. After ONE single use and washing ONCE (followed instructions that they are dishwasher safe and put away immediately after washing), they look rusty. Product is very inconvenient for a business... more work than worth. I wish I would have went with a different set. Unfortunately purchased enough knives, spoons, and forks in this line for 150 and no product guarantee.
We appreciate your review, Emily. We wish those rust spots hadn't appeared for you. There are a few precautions you can take to hopefully resolve this issue. The biggest culprit for rust spots is food left on the flatware, particularly acidic / salty food. Luckily, rinsing immediately and using a presoak like Noble's Silva Soak can help with this greatly. Another culprit is the dishmachine chemicals not being properly calibrated. Cleaners and chlorine sanitizers can do a number on stainless steel if the machine is feeding too much of either. You may want to have your dishmachine chemical technician look at this. Finally, it's important to get flatware out of the machine as soon as the machine is finished and dry the flatware. As far as your existing rust is concerned, Noble's Silva Soak is able to remove rust spots in addition to preventing them--there are special instructions on the package for that. We bought several pieces from this pattern and they really hold their shine. I chose the 18/8 because of so many negative reviews of rust on other patterns. These only see residential use and we did witness lots of rust only on the knives. Usually this grade of Stainless will only rust in the presence of strong corrosive. I suspect these are actually high carbon steel with a 18/8 S.S. veneer that can be a little porous and allowing moisture in. I am guessing this is not an issue in commercial washers but for consumer level it is. We now hand wash the knives and dry them thoroughly and that has minimized the problem. As for shape, size and utility, they are fine and the aggressive serrations can really power through a tough cut of beef.

Our staff and customers love our Acopa knives. They have the perfect weight and durability. We used a cheaper brand at first and have been so happy with the change to Acopa. It has elevated the elegance our our restaurant an our customers noticed right away.

Just terrible, they were rusty in all the crevices after a couple of uses. Spend a couple extra dollars on a better knife instead of wasting your money on these.

simple knives, nothing special, good for the price. Minus two stars is that they get the rust on it if left wet to dry. other then that is fine

This is one of my favorite knives to use at the dinner table. I would definitely buy this knife again as it is easy to clean and is made with good quality materials.
These are great, sturdy and heavy duty knives. We really like the feel of the 'extra heavy weight' silverware and would definitely purchase these again.
My husband and I decided to buy these, because we wanted a new set of dinner knives. Our other knives rusted fast and didn’t look as good, so I looked up better quality knives. I found this website and decided to order a set, since they’re so cheap and the nickel/chromium content seemed good. I’ve used it for a few weeks now and they are amazing! They are definitely high-quality and feel nice in my hands. They’re heavy, but it’s not like it’s too heavy to hold for the average person. The design and the shine is so beautiful. Also, while it’s not overly sharp like a steak knife, I was still capable of cutting a cooked steak with it.
This knife is indeed one of the best choices ever! It feels heavy in the hand, has fine lines and cuts very easy without much effort!
The extra heavy weight of these dinner knives gives you a feel of high quality. The 18/8 finish is extremely polished and looks good after repeated use as well. The Acopa Edgewood collection is our favorite set we have tried thus far.
The dinner knife in this lovely set is heavy weight and not only is shiny and classy but it is also sharp for a butter knife. Very impressed with the price and quality of this silverware.

The knifes are sharp on the edges and the handles for great in the hand. The weight balances evenly as you hold them in your hand.
The extra heavy weight dinner knife works really well with out entrees which often include meat and veggies. It’s durable construction means it’s nearly impossible to snap or break it.
I just bought a few more boxes of these knifes. They are sold and they don't show water marks so easy to polish for events.
These nights are a great quality and affordable cost is not a huge deal if wanted to get thrown away and I recommend them for any restaurant .
I bought this because of the design and when i recieved it it cut very good and its very cheap and it cuts through meat and all kinds of stuff
These knives are longer than I expected, in a good way. My wife has petite hands, but can still slice with comfort. I am tall with working hands and I finally have something I can use that doesn’t feel like I’ll break it.
Great product, Use to purchase Oneida heavy weight dinner forks at an insane price, these are very comparable and just as durable. A very fair price!
